Five Avocado Toast Recipes That Will Make You Want to Jump Out of Bed in the Morning

Teaming with fresh seasonal produce and juicy avocado, these colorful avocado toasts taste as good as they look

Despite dire predications to the contrary, avocado toast isn’t going anywhere. Delicious and nutritious and consummately Instagrammable, it is one of the few meals you can whip up in less than five minutes that doesn’t come from a box or can. The key to making it delicious? Always use the most fresh, vibrant seasonal fruit you can find. And be sure to vary the tastes and textures in each of your concoctions. I like to mix a little bit of sweet (fruit, honey) with a little bit of salty (feta or goat cheese) in each of my toasts. A sprinkling of nuts also adds a bit of satisfying crunch.

Most of my toasts start with the same basic avocado spread that I make by mashing 1/2 a ripe avocado with fresh squeezed lemon juice and sea salt (sometimes I add a bit of cumin if i want a slightly spicier and more earthy flavor). Here are a few of my favorite simple recipes:

Rainbow Avocado Toast

  1. Toast fresh baked sourdough bread
  2. Mash 1/2 avocado with lemon juice and sea salt; spread on toast
  3. Cut up fruits and scatter them in rainbow formation
  4. Sprinkle with feta cheese
  5. Drizzle with honey

Gluten Free Apples & Thyme Avocado Toast

  1. Toast gluten-free bread (I used Le Pain Quotidien)
  2. Mash 1/2 avocado with honey and a teaspoon of dijon mustard; spread on bread
  3.  Sprinkle with diced apples, minced red onion, and fresh thyme

Sweet & Spicy Mango Avocado Toast

  1. Toast Fresh Country bread (again, I used Le Pain Quotidien)
  2. Mash avocado, lime juice and sea salt; spread on toast
  3. Add fresh mango slices
  4. Sprinkle with cilantro
  5. Drizzle with Bushwick Kitchen’s Spicy Honey


Gluten-Free Berry Avocado Toast

  1. Toast 1 slice of gluten free bread (I used Udi’s here)
  2. Mix 1/2 avocado with  chopped cilantro, fresh lime juice and salted honey
  3. Top with sliced avocado, blackberries, and pomegranate seeds

Zesty Peach Avocado Toast

  1. Toast Fresh baked country bread
  2. Mash 1/2 avocado with fresh ginger zest and lemon juice; spread on toast
  3. Scatter fresh peaches on top
  4. Sprinkle with feta
  5. Drizzle with light agave syrup
